In the Bottle
How we make it: The grapes for this wine come from various farms in the Agter-Paarl region, where the vineyards are all un-irrigated with very low yields. Sunny days, cool nights and refreshing sea breezes in the afternoons ensure our grapes ripen perfectly - and to make sure we get enough flavour and body, we harvest all our vineyards at optimum ripeness, using the most advanced and environmentally friendly viticultural practices to enhance the quality of our grapes.
In our cellar, the skins and juice are separated as soon as possible after crushing. The juice is immediately chilled to 10°C and left overnight to settle. The following morning, the clear juice is racked from the lees and inoculated with a dry Saccharomyces yeast. Fermentation proceeds at 10 - 12°C for 21 days until dry. The wine is then sulphured and left on the gross lees for another 4 months to give it extra body and elegance. Before bottling, the wine is cleared up and filtered.

Food suggestions: This unwooded Chenin is delicious with creamy goat's cheese, sushi, pasta, pizza and almost anything else you can think of!
