Perdeberg Chardonnay Viognier Reserve 2011:
Vineyards were specially selected according to site, quality and ripeness. Grapes were handpicked and carefully processed into settling tanks where it settled for 2 days at close to 0?C. The clear juice was racked to stainless steel tanks and immediately inoculated with selected yeast.
After fermentation is activated the juice is moved to a selection of French barrels where fermentation takes place over 10 days. After fermentation sur lie was done for 4 weeks and matured for another 8 months before bottling. Find out more about our Chardonnay Viognier Reserve 2011
